From September 8-12, we will welcome Chef Steve Molnar and his team from Quetzal, briefly transforming The Clubhouse into the best Mexican restaurant in the country. Guests can expect one night of culinary excellence presented by Chef Molnar and his team, replicating the Quetzal experience in Haida Gwaii. The other two nights will maintain the high standard of excellence for which The West Coast Fishing Club's culinary program is known. On the final night, a delectable collaboration between Chef Molnar and our very own Chef Blaine Robinson will culminate the trip on an indulgent note, ensuring you'll want to return.
Quetzal celebrates regional Mexican cuisine, inspired by traditional flavors and cooking styles, all prepared over a 28-foot-long open wood fire. Traditional moles, salsas, and little-known ingredients are transported to the restaurant located in Toronto and are infused with the bounty of local produce for a one-of-a-kind, elevated dining experience. Quetzal received one star in the inaugural Michelin Guide for Toronto in September 2022 and retained it in 2023. Just this past year, Quetzal ranked #12 in Canada’s 2024 Canada’s 100 Best restaurant list.
Steven Molnar knew from a young age that his passion was cooking. At 17 years old, Steven began his career at the acclaimed Toronto restaurant, Nota Bene. Eager to continue his culinary education, Steven enrolled at George Brown College but quickly rerouted his schooling, choosing to relocate to France where he was offered a placement in the French Culinary Arts Program. Steven studied in France at the Institut Paul Bocuse and worked as a chef de commis at Lyon’s Brasserie le Nord. It was these unique experiences that opened Steven’s eyes to the possibilities of cooking at the highest levels, using the best techniques, ingredients, and culinary tools.
Upon returning to Canada, Steven worked in Montreal at Toqué, where he contributed to the restaurant’s internationally acclaimed cookbook, Toqué: Creators of a New Quebec Gastronomy. He then worked in two of Toronto’s highly esteemed kitchens, Bar Raval and Bar Isabel, further honing his skills in Spanish cuisine. In 2019, Steven became the head chef at the newly opened Quetzal Restaurant, where he embraced the diversity of regional Mexican cuisine and mastered the art of open fire cooking. Today, Quetzal remains one of Toronto’s highly coveted dining experiences, recognized with one Michelin star and ranked #12 in Canada’s 2024 Canada’s 100 Best restaurant list.
