Ingredients:

  • 1200 g strong flour (bread flour)
  • 400 g 00 flour
  • 800 g sourdough starter
  • 900 g water (20% ice water)
  • 50 g additional water
  • 40 g salt

Instructions:

  1. Place starter, flour, and 900 g water in a mixing bowl. Mix by hand until incorporated.
  2. Let the mixture autolyze (rest) for 30 minutes.
  3. Add salt and additional water to the mixture. Mix at speed 2 for 10 minutes.
  4. Allow the dough to rest for 30 minutes in a greased container.
  5. Portion into 300 g balls.
