Ingredients:
8 oz Halibut fillet, skin off
1 tsp salt
150 g salted butter
2 shallots, sliced
¾ cup white wine
2 tbsp whipping cream
1 tbsp dill, chopped
Lemon, 1 slice
Dill, 1 sprig
Steps:
- Sprinkle Halibut with 1 tsp salt on both sides.
- Let sit for 1 hr, rinse.
- Prepare the Beurre Blanc: place the sliced shallots and white wine in a pot. Reduce by 70%. Strain.
- Bring reduction and whipping cream to boil. With an immersion blender, blend in the butter.
- Add chopped dill. Set aside.
- Grill Halibut at 500˚ for 4-5 minutes.
- Dress with sauce, 1 slice lemon, 1 sprig of dill.
