Canada’s Top Young Chef Paul Moran Returns to The Outpost for 2015 Season

The annual David Hawksworth and Friends Culinary Adventure at The Clubhouse may be sold out, but disappointed food and wine lovers can take heart in hearing a tasty little piece of news.Chef Hawksworth’s most celebrated protégé, 28-year-old Paul Moran and his similarly talented wife Stephanie Noel will be dazzling guests at The Outpost all season long with the skills and style Paul recently used to win the 2015 San Pellegrino Best Chef Under 30 in Canada competition, and the right to compete in Milan, Italy for the title of World’s Best Young Chef.Paul and Stephanie first set foot on Graham Island in 2013 when they took over the kitchen at The Outpost for what turned out to be a truly memorable season for guests, both on the water and in the intimate and elegant dining room overlooking Port Louis.Shortly after the season ended, they returned to Vancouver where Paul won the inaugural Hawksworth Young Chef Scholarship and a cheque for $10,000 from his chief mentor to further his training. Having already worked in some of the world’s most famous kitchens in Quebec, Dubai and France, his next stop was Enrique Olvera’s Pujol in Mexico City, ranked the 20th best restaurant in the world on Restaurant Magazine’s most recent list.But in spite of numerous opportunities and tempting offers from around the world, thedine-amicable duo has opted for a return summer-long engagement at The Outpost. The cozy 14-guest jewel of The West Coast Fishing Club promises to be an epicentre of gastronomic nirvana this coming season as they amaze guests morning, noon and night with the finest of fare from both land and sea.“We really enjoy the direct connection to the surroundings at The Outpost and to the guests,” says Paul, who is an avid forager and was often spotted combing through the forested areas around The Outpost in 2013 looking for natural treasures to accent appetizers, mains and desserts. “There are a lot of different kinds of mushrooms and wild plants and all that comes from the sea. It’s a very unique place.”Paul and Stephanie will be returning with the rest of the all-star staff at The Outpost in late May to prepare for the lodge’s season opening on June 5.
