Panama: Monster Blog

Hello all,

Lots to catch up on!! We have had a very busy few weeks. It amazes me sometimes that we have only been here such a short time – tomorrow is our 3 month anniversary!! Opening a new business is an adventure no matter what, but doing it in Panama definitely spices things up!!

Some island exploration is always good to keep things focussed: I always feel so energized to visit the site of the future resort. A leisurely walk through the property will take you there in just a few minutes through the peaceful lanes that crisscross our land…or less with a shortcut…

…oops, wrong trail…here is a glimpse of a perfect, deserted, paradise beach we glimpse when we get to the end of this trail…

Backtrack a short distance to meet up with the correct path and here we are…can you imagine how this soft white sand feels on your feet as you take your shoes off to run to the water? This is our beach on the opposite side of the island from where we are moored with the ship, where the frontage of the future resort will face.

I mean, COME ON!!!

Jacko is kind enough to knock down some fresh young coconuts for a refreshing drink…this is luxury…

I am thrilled to discover that we have maranon trees in abundance here in the jungle – maranon is the local name for “cashew apple”, which is the fruit of the cashew tree. DELICIOUS, delicate, juicy, the seed of this fruit is the cashew. You can make delicious preserves and juice with this fruit. To harvest the cashews themselves: I learned recently that toxins in the double shell of the cashew are only destroyed by proper roasting which must be done outdoors, as the smoke contains a droplets of a toxin that can cause severe life threatening reactions in the lungs. YIKES!! Below is a picture of a ripe cashew apple off one of our trees…

A few days ago, we moved the Pacific Provider to get her engines hot and sweaty…well, actually to burn off any condensation that may have accumulated from standing still. The crew was pretty excited to get a chance to troll off the back deck…at 10 knots per hour, we were moving at the perfect trolling speed.

A spray of rain was no deterrent…all the crew get geared up…

Our boys in blue – our amazing game boat captains and mates showing off their gorgeous golden mahi mahi…

The rain let up, and even our Chief Engineer Scot pushed his earmuffs back and joined the fun…

Chef Michael couldn’t concentrate on work when he saw the action on the deck – the fly rod was out…no time to take the apron off – he was onto this log like jam on toast.

Everyone got a piece of the action…

This is what we caught just a few miles away from our parking spot at Punta Coco!!! Not bad for a quick run around the block…

And finally, we are caught up to today!

Today, we welcomed city dwellers Gilbert and Laurent (father and son team), fresh from the wilds of New York City. They are deep sea fishing first timers, and they are in for an adventure this week…

Today they spent the day coastal fishing…I keep a beady eye on the GPS like a deep sea stalker to keep up to date on their activity…They spent the day around our island, exploring the local hotspots.

Below is Gilbert with a lovely amberjack he will be enjoying for his dinner tomorrow night…

A MONSTER ROOSTER!!

Meanwhile, Chef Michael shops for their dinner at the local market (ha ha)…his favorite divers come by with fresh octopus, conch, and spiny lobsters…

He negotiates for some octopus and lobster, and off they go…

Here is the lobster for our guest’s dinner: a scrumptious lobster risotto..

Fresh bread – made in house every day…

Their dessert was plantain “cannoli”, crispy plantain filled with coconut pastry cream accompanied by molten chocolate cake.

Our guests wrap up the day planning tomorrow’s blue water adventure with Captain Chris…marlin tomorrow! Fingers crossed…
