Panama: Happy AnniversaryNovember 10, 2011
Six months ago, we opened for business with our first guests at West Coast Fishing Club Panama.
HAPPY 1/2 YEAR ANNIVERSARY!
Although the past six months have passed in a wonderful blur, we have accomplished so much in that short time!
On behalf of everyone here, I would like to extend a deep, deep, heartfelt thanks to everyone who has made this journey so much fun:
– All our amazing, hardworking, creative, zany, talented staff – both in Panama and in our head office in Vancouver. We are so damn lucky to work with all of you – you make us who we are!!
– Our guests who have joined us and been such excellent company – bringing their friends, family, humour, and leaving here with lots of fishy stories to tell.
– Our local business from Panama City and beyond – we are so proud and humbled by the incredible support and enthusiasm shown by the local sportfishing and yachting community for our floating restaurant and hotel. Thank you so much!
– All the people who have offered their advice, experience, encouragement since Day 1. Don’t stop!

Tonight some of my favorite local guests were in for dinner…this is what they ate:
Embutidos Ibericos (Spanish cured meats) and goat cheese from KiaOra (Panamanian cheesemaker!) with rosemary honey…
Fried Shrimp from the shrimp boat…(see photos further on in blog)
Risotto with fresh scallops (from a few hundred meters away from the ship!)…
Local Spiny Lobster with Ajo Blanco (Spanish Almond Broth), Hearts of Palm, and Leeks…
Flounder with Crispy Potatoes, Celery Salad, and Shallot Sauce…
Goat Yogurt Panna Cotta with Rhubarb…
Yesterday Blondi spotted a shrimp boat on the horizon and came bursting into the kitchen to get Michael “Camaronero!! Camaronero!!”. They grabbed a case of beer and were out the door like a shot. In exchange for a case of Panamanian beer, they got this:

So incredible. Here is Pablo holding up two perfect specimens, which we are for dinner with mucho gusto!!
