Why the night before changeover is my favorite night. No…its not because the guests are leaving (there’s always new guests coming at the same time) its because it’s Prime Rib night and it only comes twice a week. Michael and Doug put on an incredible buffet on your last supper here at the lodge, let me walk you through it if I may. First off Mike has selected the best Canadian Prime from


Alberta. Its lovingly rubbed with butter and seasoned all over…

Ready for the oven, the prime rib is seasoned with kosher salt and fresh ground pepper…very simple and so good…

Next Michael puts the prime rib in the oven and for the first 25 minute bakes it at a high temperature of 450 degrees then backs off to 325 for the next 2 hours and 30 minutes.

The most important step…after cooking the meat must sit for at least and hour so the juices which have been forced into the centre by the heat have a chance to redistribute throughout. Michael and Doug prepare classic

Yorkshire puddings (cooked in the liquid beef tallow drippings) and sear some U6 scallops and Sake-Soy marinated BC sable fish to round out the meal. The buffet is set and awaits a hungry crowd while server Laura smirks every so slightly at the photographer…

So get ready for what will soon become your favorite night at the Outpost…unfortunately its also your last. In case you didn’t know breathing sea air burns an incredible amount of calories so this is really a calorie neutral meal. Ohhh I can’t wait for Friday.
