Please believe me BC-ites - I am not trying to rub it in how gorgeously blue-skied and sunny it is here, or how we can enjoy swimming in turquoise water every day...hee hee!!
Can't you see yourself sitting here on the deck with an icy cold local beer or a cocktail in your hand?
This week we are joined by Juan and Diego Pardini, father and son super-duo for some bonding and some fishing for a few days.
But let's get down to business. Fishing business!!
Bonding was made better by a sailfish each for Juan and Diego - over 100 lbs each!

This is a little taste of what you could be enjoying here...Chef Michael prepared this feast for the father and son team last night...
Starting with cocktails, canapes, and a perfect sunset over the jungle...
Then: RAVIOLI FILLED WITH LOCAL SPINY LOBSTER AND PIXBAE (see below for explanation) WITH SMOKY WILD MUSHROOM CONSOMME AND HERB OIL
BRAISED WAGYU SHORTRIBS WITH ZAPALLO PUREE AND BRAISED PEARL ONIONS
PASSIONFRUIT SOUFFLES WITH STAR ANISE ICE CREAM (ICE CREAM IS ROLLED IN SPICED BREADCRUMBS FOR SOME CRUNCHY TEXTURE)
As far as I know, the only place to eat such an exquisite meal is...RIGHT HERE!!!
Below is a picture of pixbae, the fruit in the ravioli. This is a starchy fruit, that will save the world one day when we run out of other food supplies. One of these fruits is equivalent in protein to an egg!!

Steph and Shannon are blown away by the souffle, as are the guests.
Our Captains can't stop talking about how good the fishing is promising to be in August and September. They said that last September was a record year for billfish - and it is shaping up to be even better this year.
